An extra virgin is not made in the bottle: it is made in the hours between picking the olive and milling it. These are ours.
The two varieties behind our oil, the traditional ones in the Campo de Montiel.
Olives carry water that ferments and oil that oxidises. Storing them spoils the result — locally it is called «atrojado». Here they are processed within 24 hours of harvesting.
Mechanical processes only, under controlled conditions, with nothing that alters the oil. The flavour, aroma and properties of the fruit are preserved.
The Certification Service independently analyses and certifies the production and processing requirements, in accordance with EEC Regulation 2092/91.

Bitterness and pungency are the attributes that stand out most in our oil, and they come from the olive varieties it is made from. These are published tasting values, not an impression.

The origin
In June 2010 the European Commission recognised the Campo de Montiel as a designation of origin and added it to its list of quality agri-food products.
The PDO covers only extra virgin olive oils obtained from groves in the designated municipalities: the processing and bottling area is the same as the growing area. Everything — from cultivation, pruning and harvesting to milling, extraction and storage — is governed by codes of good agricultural and food practice, with external control and certification that guarantee traceability and food safety.
Who we are

The first were planted in the 19th century. Since then the trees have passed from generation to generation, with a commitment to the land that is part of the family tradition. You could put it the other way round: it is the generations that have passed through the olive trees, because the estate is entrusted to each of them for its care but remains unchanged over time.
Traditionally, as for so many families around here, the oil covered the household needs for the year. A few years ago we set up an agricultural cooperative, SAT «Quinto del Cuartillejo», with a single aim: to sell what has always been our own oil.
Where the name comes from. «Quinto del Cuartillejo» is one of the places where our calares lie — the local word for the soil best suited to olive groves. Calar: «a place where limestone abounds» (Dictionary of the Royal Spanish Academy).
And why we say «las olivas». In this region the trees are feminine: people say «las olivas», not «los olivos» as in the rest of Spain.
